Position Summary: Under limited supervision, this position closely monitors wine quality and coordinates routine daily winemaking activities with the Winemakers, Lab, Cellar, and Production Planners. The Assistant Winemaker closely monitors various wine programs from harvest through finishing, blending, bottling and shipping, while maintaining quality and style of wine. This position will also actively participate in the review and improvement of current procedures, practices, and equipment through R&D.
Duties/Essential Functions:
- Monitors and coordinates routine daily winemaking activities with the Winemakers, Lab, Cellar, and Production Planners.
- Performs all Enologist duties.
Performs specific harvest winemaking support duties including, but not limited to:
- Monitors M/L, yeast propagation programs.
- Monitors experimental wines and processes.
- Performs daily fermenter tastings and evaluations.
- Monitors fermentation temperatures and brix.
- Writes process requests and instructions as required to promote wine quality and successful completion of wine programs.
- Develops and reviews, SOPs for wine laboratory trials.
- Reviews Tank Inspection reports daily and coordinates chilling and SO2 additions.
- Receives blending instructions and provides logistical support for timely completion of work.
- Participates in blend development, tasting panels, sensory projects, tours/tastings, and wine evaluations.
- Assists in reviewing current winemaking processes and looks to fine tune the process via modifications of the process or through capital expenditure.
- Provides back-up support to other winemaking staff, as required.
Position Requirements:
Education: B.S. in Fermentation Science or related field.
Experience: 3 years winemaking and wine production experience. Broad experience in making various wines and wine styles; making wine in large winery conditions. Ability to work within a large, complex database and production management software system.
Knowledge: Solid winemaking knowledge, understanding of winemaking theory and winery laboratory practices. Excellent wine sensory skills, communication skills, and organizational skills.
