Description:
Supervise the kitchen Sous Chefs and staff daily functions to ensure department standards are met in food quality, presentation and safety.

Duties:
• Responsible for assigned area kitchen and Steward personnel. 

• Ensure quality, consistency, portions and presentation of all food products. 

• Ensure sauces, soups, dressing and food-related items are prepared as per recipes and “ServSafe” and HACCP guidelines. 

• Maintain and Update all departmental schedules. 

• Responsible for day to day operations of respective kitchen. 

• Consistently enforce and uphold all casino and Culinary Operations policies and procedures. 

• Ensure proper training of personnel including equipment usage and “ServSafe” Standards. 

• Supervise and maintain a presence throughout the shift. 

• Ensure quality, cleanliness and safety at all times according to departmental policy and “ServSafe” standards. 

• Responsible for cleanliness and organization of restaurant kitchen equipment. 

• Develop new menu items and respective recipes for restaurant. 

• Maintain and update all recipes for restaurant menus. 

• Implement and Maintain product specification standards for new and existing menu items. 

• Manage all purchasing, usage and waste of food related items. 

• Delegate duties to Sous Chefs as necessary. 

• Participate and support all guest service Training Programs which is designed to produce advocates for Table Mountain Casino. Supervisors are responsible for encouraging staff to become fully involved in this guest service program. 

• Perform other duties as assigned. 
Requirements:
• Minimum of Five years kitchen management experience with a strong culinary arts background is required. 

• Excellent interpersonal, guest service, leadership, communication (verbal & written), analytical, decision-making, inventory control, computer literate and problem-solving skills are required. 

• Demonstrated ability to analyze P&L and understand cost control methods. 

• ServSafe certification & HACCP knowledge is required. High School Diploma required. 

• A college degree in business or related field is required, unless otherwise waived by Executive Management of the Casino as based on determined experience and accomplishments.
